Questions for the chef.

How to cook your prime rib?

To properly cook prime rib, start by preheating your oven to 260°C. Season the meat generously with salt and pepper. Sear each side of the prime rib in a very hot pan with a little oil until golden brown. Then transfer it to the preheated oven for about 15-20 minutes for rare. Use a meat thermometer for optimum accuracy, 52-55°C for rare. Let the meat rest for 10 minutes before serving to allow the juices to redistribute.

What weight to choose for a prime rib for 4 people?

The amount of prime rib needed to feed four people will depend on the appetite of each person and the other dishes served during the meal. In general, about 200-250 grams of boneless meat per person. However, a prime rib contains a bone that adds weight but is not edible. Therefore, for a prime rib, you could aim for a total weight of about 1.2 to 1.5 kilograms to comfortably feed four people.

What is the piece of prime rib?

A beef rib is a piece of meat that comes from the upper part of the animal's back, between the shoulder and the rump, more precisely from the rib area. It is made up of part of the loin, the rib bone and often part of the tenderloin. It is a very tasty and tender cut, particularly appreciated for its juicy texture and rich flavor when cooked properly. It is ideal for cooking in the oven or on the grill.

What is the price of a prime rib?

The price of a prime rib can vary greatly depending on several factors, including the quality of the meat, the origin of the animal, the type of farming (organic, free-range, grain-fed, etc.), and where you buy it. On average, you can expect to pay between 30 and 60 Canadian dollars per kilogram for a high quality prime rib. However, it is always best to check local prices as they can vary. Keep in mind that buying high quality meat may cost more, but often the taste and texture is far superior.
