Sear each side of the prime rib in a very hot pan with a little oil until golden brown. Then transfer it to the preheated oven for about 15-20 minutes for rare. Use a meat thermometer for optimum accuracy, 52-55°C for rare. Let the meat rest for 10 minutes before serving to allow the juices to redistribute.

What weight to choose for a prime rib for 4 people?

The amount of prime rib needed to feed four people will depend on the appetite of each person and the other dishes served during the meal. In general, about 200-250 grams of boneless meat per person. However, a prime rib contains a bone that adds weight but is not edible. Therefore, for a prime rib, you could aim for a total weight of about 1.2 to 1.5 kilograms to comfortably feed four people.
